

Mushrooms To Forage This Spring π
Spring revival brings blooming mushrooms but do you know which ones to look for? π Popping up under our feet this season is a vast network of edible fungi! Here are some of my favorites π€€
π Lionβs Mane - Known for its cognitive + nerve regenerative benefits. This mushroom is rich in antioxidants, vitamins + minerals.
π Morels - Prized for their rich nutty flavor + meaty texture. Morels are high in protein, fiber + various vitamins and minerals.
π Giant Puffball - Anti inflammatory + nutrient dense. A great edition to omelets or substitute for tofu.
π Maitake - Rich in vitamins B + C, plus minerals like potassium and selenium. Look for them in late spring and early summer, usually after periods of rainfall.
