They receive 15-20% of the bartenders tips in order to help cater to whatever the bartender(s) needs during the night; restocking beer/liquor/ice, taking out the trash, emptying the well if needed, etc. They definitely come in handy at high volume bars😅 However, occasionally you’ll come across a smaller bar that doesn’t need one and just lets the bartender handle it herself/keep her tips. I’ve worked at both💪🏼
